{"id":644,"date":"2015-01-11T18:32:26","date_gmt":"2015-01-11T23:32:26","guid":{"rendered":"http:\/\/jonesling.us\/blog\/?p=644"},"modified":"2015-09-04T14:42:11","modified_gmt":"2015-09-04T18:42:11","slug":"tortillas","status":"publish","type":"post","link":"https:\/\/blog.jonesling.us\/?p=644","title":{"rendered":"Tortillas"},"content":{"rendered":"<p>Tortillas are surprisingly easy to make, but it does go a lot faster with two: one to flatten dough while the other cooks the previously-flattened dough.\u00a0 Each tortilla takes about as long to cook as to roll.<\/p>\n<p>These tortillas are good enough to eat plain.\u00a0 They store well in a ziploc baggie.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 cups flour<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1\/3 cup oil<\/li>\n<li>(up to) 1 cup warm water<\/li>\n<\/ul>\n<p><strong>Steps:<\/strong><\/p>\n<ol>\n<li>Preheat a large skillet on medium heat (our stove runs hot so it&#8217;s more like medium-low, YMMV)<\/li>\n<li>Mix flour and salt in a medium mixing bowl<\/li>\n<li>Cut in oil with a pastry blender or a fork<\/li>\n<li>Slowly incorporate water, mixing until a soft dough forms<\/li>\n<li>Make 2-inch dough balls &#8211; probably ten or twelve<\/li>\n<li>Roll flat with a rolling pin.\u00a0 The dough should be as close to paper-thin as you can make it (you&#8217;ll probably wind up with cardstock).\n<ul>\n<li>You\u00a0 won&#8217;t need to flour the surface &#8211; if the dough is good it won&#8217;t stick (except maybe to the rolling pin)<\/li>\n<\/ul>\n<\/li>\n<li>Cook the tortillas one at a time until they start to bubble, then flip and heat until brown spots form.<\/li>\n<\/ol>\n<p>Credit to <a href=\"https:\/\/kbmillers.wordpress.com\/2013\/09\/05\/169\/\" target=\"_blank\">https:\/\/kbmillers.wordpress.com\/2013\/09\/05\/169\/<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Tortillas are surprisingly easy to make, but it does go a lot faster with two: one to flatten dough while the other cooks the previously-flattened dough.\u00a0 Each tortilla takes about as long to cook as to roll.
