{"id":2229,"date":"2019-03-29T20:12:24","date_gmt":"2019-03-30T00:12:24","guid":{"rendered":"https:\/\/blog.jonesling.us\/?p=2229"},"modified":"2019-03-29T20:12:24","modified_gmt":"2019-03-30T00:12:24","slug":"sausage-and-vegetable-roast","status":"publish","type":"post","link":"https:\/\/blog.jonesling.us\/?p=2229","title":{"rendered":"Sausage and Vegetable Roast"},"content":{"rendered":"<p>This is a kind of suggestion-type recipe, throw in your favorite vegetables and ignore the ones you don&#8217;t like (or don&#8217;t want to do <em>today<\/em>).<\/p>\n<h1>Ingredients<\/h1>\n<ul>\n<li>Two medium-sized red potatoes<\/li>\n<li>1 head of broccoli (or cauliflower)<\/li>\n<li>2 bell peppers (use two different colors, for the look)<\/li>\n<li>1\/2 pound green beans (a couple of handfuls)<\/li>\n<li>1 bunch of asparagus<\/li>\n<li>3\/4 pound of sausage<\/li>\n<li>Olive oil<\/li>\n<li>1\/4 cup grated Parmesan cheese<\/li>\n<li>1\/4 teaspoon red pepper flakes<\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1\/2<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">garlic powder<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">tablespoon<\/span> <span class=\"wprm-recipe-ingredient-name\">dried oregano<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">tablespoon<\/span> <span class=\"wprm-recipe-ingredient-name\">dried parsley<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1\/4<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">salt<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1\/4<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">pepper<\/span><\/li>\n<\/ul>\n<h1>Steps<\/h1>\n<ol>\n<li>Heat up an oven to 400\u00b0 F<\/li>\n<li>Cut up the potatoes into small (less than 1 inch) pieces. If they&#8217;re too big they won&#8217;t cook fast enough<\/li>\n<li>Cut up the broccoli, peppers, and asparagus into comfortably-bite-size pieces, and snap the stems off the beans<\/li>\n<li>Slice the sausage into &#8220;coins&#8221;<\/li>\n<li>Toss veggies, sausage, cheese, and spices into a large bowl with enough olive oil to lightly coat everything (a few tablespoons)<\/li>\n<li>Spread out onto a couple of pans\n<ol>\n<li>Everything should be a single layer; doubling up will lead to a mix of burnt and raw bits<\/li>\n<\/ol>\n<\/li>\n<li>Bake for 15 minutes<\/li>\n<li>Flip the veggies and reverse the pans top to bottom<\/li>\n<li>Bake for another 10-15 minutes<\/li>\n<\/ol>\n<p>Serve with brown rice!<\/p>\n<h1>Variations<\/h1>\n<p>Swap in a cup of any of the following:<\/p>\n<ul>\n<li>butternut squash<\/li>\n<li>zucchini<\/li>\n<li>sliced carrots<\/li>\n<li>a sweet potato<\/li>\n<li>turnip<\/li>\n<li>radishes<\/li>\n<li>sliced jalape\u00f1os<\/li>\n<li>cherry tomatoes (cut in half)<\/li>\n<li>red onions<\/li>\n<li>mushrooms<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This is a kind of suggestion-type recipe, throw in your favorite vegetables and ignore the ones you don&#8217;t like (or don&#8217;t want to do today).
